Positive experience: The place really tries very hard and is commendable on the fact that they use homemade tomato, dough and fresh herbs and ingredients. They use a real wood fired oven too. They face 3 critical problems. Their oven is dirty and the dough picks up too much black carbon ( cancerous) . The second problem is that their tomato base contains too much natural tomato juices .This makes the dough absorb the water in the oven and the dough comes out floppy and doesn't crisp up like authentic wood fired pizza . The last problem is they use a "wet dough" . The result is they don't mix it in the mixer long enough to get enough gluten which gives bread it's shape and texture .This makes the "floppy" pizza effect more pronounced. So basically it's like a floppy pizza with tomato puree on it ..when you pick it up in your hand the dough flops ..so.you can't put the tip of the slice into your mouth ...it flops down and then all the hot tomato puree drops onto your hand and lap. I'm sorry guys , but if you can take this advice from a long time pizza fan. I'd continue eating with you and change my rating to 5 stars.If you don't change it, all the fresh , authentic ingredients won't be able to maintain your upward trajectory. Please don't take this opinion personally. The key characteristics of a perfect Neapolitan pizza are a super thin base with a crispy but light and airy crust according to various sources. I think that I'm trying to say it isn't crispy enough or at all. If there is a tradition in Naples to eat pizza which isn't crispy in any manner then it's not mistake.. however I'm still under the impression it should be crispy in places at least. The dough is very airy and similar to the grain of a ciabatta.
